    Welcome to the forums.

Using one cable from the PSU that splits off into two connectors at the card end will be fine.

This will not limit power to the card?

It shouldn't limit power using one cable but often it's considered better to use two different cables when possible.

2080 TI & other higher power cards or those with high OC - can perform better/ more stable - with 2 cables

No..The cable is rated for the load, otherwise, PSU manufacturers wouldn't include them like they do.

If you don't mind extra cable clutter and the appearance of extra connectors hanging around, you can use two, but one will be OK, it won't matter.

So you can use one or two cables as suggested. Your PSU has more than enough power.
