Some of my favorites when I was a kid would be Star Wars The Forced Unleashed 1 and 2. Recently, I would say that Star Wars Jedi Fallen Order ended up being a favorite as well

KOTOR 1 and Jedi Knight 2.
 
I came back to Fallen Order recently and I really think it got an overly favorable boost just on account of being a non-terribad SW game.  It's fine, good even, but I don't think it's amazing.  There aren't enough duels, and the lightsabers themselves don't feel very good.  The DW is just outright bad, and the single blade feels like using a scimitar in Dark Souls.  Long, elaborate animations with low damage and very little stagger.

For Honor used to have a fun event with lightsabers for all the fighters. Was amazing.

For long time my favorite was Star Wars Jedi Knight: Jedi Academy.
 
But Star Wars Jedi: Fallen Order is also great.
 
I never played KOTOR. Maybe one day I will try it. It was too difficult for me when it was released. I was too young.

I really liked the new star wars squadrons game. Even though im terrible and only play the story mode in VR and gawk at everything xD

Jedi Knight 2 for action, and Tie Fighter for simulation. A remake of the original Tie Fighter would be amazing.

Oh snap, I completely forgot about that. Using the codes to get the additional ships like the Naboo Starfighter really was the icing on the cake.

I've only played this on the console (Xbox) and I'm looking forward to eventually playing it on the PC for the VR capabilities. I too suck at it - I'm fairly certain it's got a bit of a learning curve to be really good at it.
