Dang it fellas... i7 7700k is overkill... Dual core Celeron is underkill... Where's the happy medium? 4 core Pentium?
PSU... 550w is too small for a rig rated at 383w? It's only for one card and I don't do any OC'ing... Going to gold over bronze is a fair point... And if I move up to a 4 core, I'd probably go up on the PSU wattage anyway.
4gb per stick is the smallest DDR4 ram I can find, using two (8gb) was said to be overkill for a folding rig and it can run on one stick, I checked.

What are your End Goals?
What Else is this Computer going to do?
 
If all you will EVER do is Fold on a Single GPU and Nothing Else then go with 1 Memory Stick and your Dual core Celeron CPU + that 550 Watt PSU as Chris2101 posted.
