I loaded the 1809 release which allows for a winpe boot environment. So I'm going to try to convert the drive from MBR to GPT.    
 
If my research is correct, I can do so by:
  • Go to the winpe/command prompt
  • Make sure I'm in the System 32 directory (C:\windows\system32) 
  • Then enter the following: mbr2gpt /convert
  • Upon reboot change the boot selection to UEFI
Then stand by with my fire extinguisher and hope it works. 
 
I'll let you guys know how it goes

It worked.
Command line (From Winpe mode) converted the drive to GUID / UEFI
Specifically:
 
C:\windows\system32\ mbr2gpt /convert
 
And Boom....booting in UEFI
