I'm actually having the same shutdown/rebooting issue with a 3080 ti, upgraded from a seasonic TX-750 to a PX-1000 in attempts to solve it. It made the issue less frequent but did not solve it. It's most easily reproducible by cranking the upscaling settings up in madvr and hammering the seek key through a video. I see my UPS showing spikes of > 950w while doing that, which is just stupid. Ended up contacting evga and they immediately suggested RMAing the card, so that's my plan.
I still feel like its PSU related, but I'd blame the card before the PSU, as there's no way it should be drawing that much power or spiking enough to trigger OCP. I've seen several reports of this happening mainly to seasonic PSUs, so perhaps if anyone out there tries to solve it by upgrading look at a different brand of PSU.

In other news I have a 1200w superflower on the way so I'm interested to see if that solves my issue before I send the card off for RMA. I'll update this if it does.
EDIT: Well the superflower was a steaming pile on arrival. Had a bent chassis with solder balls falling out, didn't bother even trying it, back it goes.
