Opinions on EVGA B360 - i7 - RTX 2070 build.

Hello, just looking for some opinions here on how well the EVGA B360 MB does and how it works with i7 and in Coursair 280X case.  I am working on building a new system just for gaming to replace a Z77 MB system I built back in 2012 and have been upgrading for a while.
 
I want this to be a build without going too high on the budget, I already have some parts I can pull from my older system.  This is the system I'm thinking of:
 
New Parts:
EVGA B360 Micro MB
Core™ i7 9700K
Coursair Crystal 280x case
16 Gig of memory - thinking of 2 8 Gig Coursair Vengeance RGB sticks - 2400 or 2666.
Maybe Coursair RGB 2 Fan water color like H100i?
 
From previous system that I will migrate to this new system:
EVGA RTX 2070 Gaming XC
1 TB SSD already have Win 10 installed
EVGA Supernova 750 W G3 power supply
2 TB harddrive for backups
SB Kantana I will use for sound via USB, I don't think I'll use the MB integrated sound card.
 
Some questions I have since I haven't built a system in several years.
1.  Is liquid cooling for the CPU pretty much a given now with i7 or i9 - even if I don't overclock?
2.  I don't plan on overclocking and I know B360 won't support that - so is using the i9700K a waste then and would a lower model CPU be enough?
3.  I think the B360 has 3 fan headers, will this be enough for 2 air fans and maybe dual fan water cooler/radiator?  Seems like it should be, but I haven't build a system in a while and I have never added water cooling/radiator setup to a system.
 
Note, gaming I do is a mix of RTS/Strategy/Role Playing.  I run 1080 in games, but also 2560 X 1440.  Old system did pretty good with RTX 2070 and framerate.  But turn time on Civ 6 is forever and Stellaris is running so slow, plus sometimes old system random reboots and crashes, so I think its time for a refresh.

    I have an Intel 8600K on a B360 motherboard with 16 GB GSkill memory, and a GTX 1070. Processor is cooled by a CLC 240 cooler. It's a great value with more than adequate headroom for running folding at home projects. I definitely think an I-7 would work just fine with this board. Plus, the on-board Nu Audio headphone amp is outstanding, paired with Dolby Access software from the Windows store. It has cpu, system and chassis fan headers strategically placed on the motherboard to cool your build. Go for it!

    I did go ahead and do it and I'm pretty pleased with the results.
     
    Picture is from the first boot, I still have some cable cleanup and other things to do.
     
    Only issue I had was there is only 1 internal USB 2.0 header on the B360, and I needed 2 USB 2.0 connections for RGB fan control and RGB Pump control.  But I found a small USB hub that I put it in the case.
