Really depends on what you like. my favorites are raceroom racing experience and assetto corsa competizione.
 
Raceroom is a free to play game, comes with a fair assortment of cars and tracks for free. Additional cars and tracks can be purchased separately or as packages. Buy vrp at raceroom store first, then buy content from raceroom game site. There are sales on and off and the entire package is about $70 USD if you use vrp. Force feedback, handling and sound are very good. The cars range from open wheel to GT to prototype. There is a good spectrum of tracks and VR performance is pretty good as well.
 
ACC is concentrated on GT3 and GT4 cars and associated European tracks. Force feedback and handling are good. ACC is a very resource intensive video experience though and VR is not bad but requires a lot on trail and error to get it to your liking.
 
Assetto corsa and automobilista 2 are also very good in my opinion. AC has a large number of third party mods for cars and tracks, there are few cars or tracks that aren't available. Automobilista 2 has good graphics and vr, but cars are limited and many of the tracks are Brazilian.
 
Iracing is a very popular game for online racing but can be very expensive, I have never tried it though.

Not really sure, i've been using a wheel and pedals for some time. I think the f1 series can be played decently with a keyboard tho. My experience was that I was no good at all using a keyboard!

Asset to is pretty good. Even harder to find something good for VR.

I run rFactor2.  The official content covers both tin tops and open wheelers, with mostly road courses and and a few ovals.  There is the modding community as well.

Assetto Corsa is probably a good place to start. It goes on sale often, so if you're not in a big hurry, you could wait and save some money.

Project Cars is also nice. It also includes VR mode in the game.

I sim race on occasion. The 30 series definitely helps on the high resolution front. VR was my primary reason to jump from a 1080 to a 3080. A lot easier to hold 90 fps at high resolutions.

Looks like an interesting summer, Fanatec with the CSL DD and CSL load cell brake set and Thrustmaster with the SF1000 Ferrari wheel and the, fingers crossed, rumored DD wheel of its own.
Many opportunities to spend some cash

I sim race Wreckfest (675 hours total). I also have about half the time I do on Forza horizon 4 but I don't really have the time to play games much anymore :(

Really like ACC as well. tempted but haven't tried iracing. Built a new PC last year I9-9900K, etc., and have been trying to get a 30 series GPU since then. The old 1080, non-ti, is chugging along over-clocked but barely holding on, especially with ACC in VR!

Man, I'm still running 2 GTX 260s from like 2009. I've been trying my darndest to find a 30 series GPU (as are so many others). The landscape is wiiiiiiiiiiiiiild.
