Flow Control Fan Curve

When I open up the fan curve control I have two curves to customize the coolant and cpu just wondering why I can only use one of them at a time? I click apply on one and the other unapplies.

    It is Asking you to Decide Which Temp to Go by
     
    Do you want to use the CPU Temp  -- OR -- the Coolant Temp --> to control the fans

    Hi! I am having temp issues and am looking into this now. I only just realized the setting can be one or the other (only took 2 years to figure this out...), and have just changed the toggle from Coolant to the CPU curve to try and keep the temps down. Spikes are going from 35 to 50-60 (sometimes higher) in a blink, and holding. I am only surfing the web...
     
    So, long to short, which setting is best to use?
     
    The coolant may only rise to 45-50, but the CPU is cranking to 75-80 at times... not even gaming. I have had unexpected shut down's which prompted the cooling adjustment. Now with the CPU toggled, the fans are fluctuating crazy with the temp swings. Makes for a loud experience.
     
    Could this be a paste issue? It still has the stock paste from when I first got it...

    Update: It seems I had knocked the pump speed to min which has caused the wild temp swings. I have adjusted back to max pump speed, and switched the auto fan curve back to the cooler temp, instead of CPU. It seems to be stabilizing. Still trying to understand why the pump speed would need to be maxed all the time.

    This brings forward another question, why the pump speed would not be part of the auto config... it doesn't seem to jack up like the fans. It increases, slightly, but there is no real curve you can set for the pump. It seems only the fans are controlled by the curve.
     
    Also, is there a "best setting" to set the cooler at? I really appreciate any help regarding how to set this up properly. I am still unsure what I did...

    pump 100% all the time ... need to get the heat Off the CPU heatsink = good coolant flow
     
    fans are a balance of sound quality vs cooling
