Hey guys, I'm from Argentina, so be patient with my english.

I have an 1070 FTW and make some OC with Precision X soft, help me looking JayzTwoCents videos and he recommend lose some noice for better temperatures, so modify the curve of the fan but on idle gpu, like internet, youtube and windows use the fans are very loaded and I have an average temp of 41ºC. When I installed the video card, the fans just go off when it was not necessary, I want to recover that with out lose care of the OC temp.

Turn off the custom fan curve when at the desktop, and when you are about to load up a game turn it back on.
 
Edit. You can also drop your fan curve even lower when 40C and under.

On the Select Presset just have Aggresive or Quiet, who is the default?

Hello Kikote, I'll answer in Spanish.
 
En la ventana con las propiedades que aparece en la foto que incluyó, simplemente desactive el botón que dice "Enable Automatic Fan Control", apriete el botón azul que dice "OK" y cierre la ventana. Luego, en la ventana principal de Precision X OC, asegúrese de que el botón que dice "Auto" debajo del control para manejar la velocidad de los abanicos está azul (prendido). Si no está azul, apriete el botón para activar el control automático de la velocidad de los abanicos (la tarjeta controlará la velocidad automáticamente) y apriete el botón grande que dice "Apply" justamente a la izquierda del botón que dice "Curve".
 
Al completar esos pasos, la tarjeta de video utilizará la curva de velocidad para los abanicos programada en la fábrica. Bajo esa curva de fábrica los abanicos solo se prenderán cuando la temperatura de la tarjeta de video pase de 50-55 grados Celsius (122-131 grados Fahrenheit).
 
Ese vídeo de JayzTwoCents fue para aplicar un overclock a la tarjeta de video, pero las pruebas que él realizó fueron en un bench abierto y no dentro de un case de computadora. Jay estaba buscando sacarle la velocidad más alta posible a la tarjeta, sin consideración alguna al ruido. Bajo operación normal, sin aplicar un overclock, no es necesario llevar los abanicos hasta 100 por ciento, pues son demasiado ruidosos a esa velocidad. Inclusive en un overclock como el mío (+125 al procesador de la tarjeta y +500 a la memoria), 70 por ciento en los abanicos es más que suficiente para mantener la temperatura entre 71 y 73 grados Celsius. La temperatura ambiente en Argentina en estos momentos debe estar bastante baja, así que creo que se puede dar el lujo de bajar la velocidad de los abanicos un poco más, quizás a un 50 o 60 por ciento de velocidad... : )

I think you should use the very OPOSITE fan curve, like mine:

 
So you will have quiet fans when on desktop, and a strong cooling when playing ;)

Never. With my BIOS and with your BIOS, the minimum speed is 20%; do you see the yellow-orange line? It's placed on the 20% level, so you can't go under it. To do it, you would need to change your BIOS to a 0db one, asking for it to the Support team. (Personally, I prefer to never get off).

I like to add 10 to the Temp to get % fan speed.
 
Temp 40 C = 50% fan
 
Temp 60 C = 70% fan
 
At 40% fan speed, you should not get much sound from the GPU fans
