Why do companies not produce a monitor that can attach to each other with no bezel at all? Like if the bezels were removable with some kind of latching/hinged system? Is that possible?

There is a fundamental misunderstanding of how a physical LCD panel is designed. All the mass produced ones have a metal frame and associated electronic connection to the glass panel. You're going to have a bezel no matter what on TN and IPS panels.
