I just bought 3 display port cables. I'd like to replace my DVI cables and possibly have one card run all three displays. Which Display Port connector on the card would I use for the center, left and right displays?

Doesn't matter in Windows (you can pick the location of each).
 
Your BIOS display is dependent on this order, B being first:

"B" needs to be connected to the main (in my case, center) display?
 
 
This is how I presently have them connected. I did rearrange them while in Windows so it knows what my main display is.
If you look close, you can see where I added C, L and R for center, left and right.

Your BIOS will always boot on B if all you are using is DisplayPort.. Other than that, it doesn't matter once you get to windows.
 
As you have it now, your BIOS shows on your Left display, correct?

When I booted my computer after installing the cables, the BIOS splash screen showed on my right display. I'm going to play around with the DP connectors and reboot the computer a few times so I can make sure my BIOS shows on the center display.

Figured it out. The display port that's furthest away from the motherboard is the one that boots to the BIOS splash screen (at least in my situation, using just Display Ports).
 
This is how I now have my displays connected. I didn't have to change anything in Windows as all the desktops were displayed on the correct monitor :D
