One of my favorite cheeses is aged Asiago. It must be aged, though, as aging makes it sharper an nuttier. Just like it has done for me.

I find it very odd, though, that cheese must be thinly sliced in order to taste it's best. Unless it's melted of course, in which case it's just a gooey blob of pure yumminess.

I currently have 14 varieties of cheese in my refrigerator, and one hanging in my garage. It is hanging in my garage because the wife says it smells too bad to keep in the fridge.

I think my wife is hoping for the sock, as everytime she thinks of eating a cheese *that* stinky, she turns ghost white. Not a pretty color on her. Ahhhhhh.... but a small price to pay for a really good cheese. Or a vintage gym sock.

I was thinking of letting it age through the summer, but it's only February and the neighbors have already started to complain. Even I, the cheese connoisseur that I am, begin to cringe when I think of that cheese in deep August.

Some of them have to be kept in vacuum sealed plastic to preserve not just the wax, but the fragrance contained therein.
