Right now, I've got both monitors powered by 1 card, and the cards connected in SLI, Dual monitors enabled in the nVidia control panel, and SLI enabled... The monitors are connected by display port cables...

That's the best way to do it. Plug them into the primary graphics card.

This should be helpful if you're trying to do surround.
They should add the GTX 1080 Ti to the list! Although the TITAN X configuration is fine. Two DisplayPort inputs on the main GPU is fine for this configuration. Sounds like a very nice setup, enjoy!

There's no benefit of hdmi2.0 over display port. The only possible advantage is that the HDMI port is considered priority for bios screens and the like. It won't make a difference for windows.
