Once I get another M.2 or three I will set up a RAID NVMe and rip out the HDs and see if I can get the cabling in better shape.


Nice! That would be crazy fast. 


It all boils down to how much cash I can save

My only solution for M.2 RAID is to use PCI-E x4 port on motherboard and install PCI-E adapter for 2x M.2.
God bless x4 port together with x1 on same motherboard.
PCI-E x4 slot with x4 device can't steal 8 or 16 PCI-E lanes as x4 device installed in x16 slot.
People with CPU with 28 PCI-E lanes usually waste free lanes and couldn't done nothing with them because anything what they use drop GPU speed on x8. Except if port is limited on x4. 
I don't understand that manufacturers as GIGABYTE, MSI, even ASUS didn't remember to do that from beginning and improve situation for people with 28 PCI-E lanes.

One of the reasons I went with Threadripper is the 64 PCIe Gen 3 lanes available.
