Not a reboot, but Jak and Daxter: The Precursor Legacy needs a proper sequel named Jak and Daxter 2(as opposed to Jak II). Start by changing the time machine in the Precursor vault into something more clever having to do with white Eco.

Re-build which continues the story of main character. There is so much options. Surely gameplay can be a bit modernized, but should stay more/less the same. Grim Fandango's is a good example of gameplay but with more dialog, love playing the remastered version.

Thief 1 & 2
After the disaster that was Thi4f (not to imply there was ever a fourth Thief game, it doesn't exist) and the difficulty of translating not just the sprawling highly detailed levels and enemies and NPCs, but also the technical difficulties of bringing accurately propagating 3D sounds through all those materials and geometry... and today's development mentalities and handholding 'sensibilities' I'm fairly sure any remake would end up being an even worse disaster than Thi4f: Doesn't Exist.

I'm one of the 3 people that loved the game but I would love to see a remake of Kings Field from the PS1. It started off so slow that most gave up but for the time it turned out to be very deep and entertaining.
