What is the difference in EVGA 3080/(ti) Ultra Hybrid XC3 and Ultra Hybrid FTW3?
There is no testing, no comparison, what level of noise, etc...
I would be very grateful if the community find information

There is a comparison button on each one of those cards, noise is going to be identical, the reason for the hybrid cooler is its quieter than the open air card.

FTW3 will have a more robust VRM, higher wattage limit and higher boost clock stock than the XC3.

The higher tier card will have a higher boost clock but will also draw more power, the boost clocks you find in the spec page of the card reflects it's lowest end boost frequency based on temperature, most all cards run a 1- 3 variance and that's why you won't see comparison reviews of the same cards at different models, they are so close it's pointless.

Silicon lottery is still a thing, so you could possibly get an XC3 that can clock higher than a FTW3. However, the guaranteed minimum clock speeds are higher on the FTW3 so on average the FTW3 should be better.

The FTW has extra sensors for the memory chips that the xc3 doesn’t.
Well that works with the EVGA X1 software anyway

Well that works with the EVGA X1 software anyway
Exactly the difference between those 2 and this is helpful when you want to tweak your OC performance :) 2 sensors for GPU, 3 sensors for VRAM and 5 for power input!

Another critical difference is the size of the cards. In my case and cooling setup the FTW 3 which is 1 " longer would be way to close to my rad in the front, if it fit at all. It's 1"longer so be sure to measure before deciding on a card to get. The FTW has slightly better performance

Yeah, good to know, and something very important, by the design of those high ends 30XX series, not good to have a rad in the front, I experience the trouble with my 4000D airflow case with my CPU Rad in the front because too big to fit on top, and I have to keep my Side glass panel removed to lower ambient temperature.
