I was looking at the 3070s and I cannot find a difference between the versions.
 
 
What's the difference between the 08G-P5-3751-KL and 08G-P5-3751-KR cards?
 
I see the 08G-P5-3755-KR has a backplate and a little bit more clock speed and texture fill rate.
 
I also see the difference with the 08G-P5-3767-KR version as well.
 

You're exactly right, the only notable performance differences in all cards are their boost clock frequencies and texture fill rates:

Also the difference between the two XC3 Black cards (08G-P5-3751-KL and 08G-P5-3751-KR) appears to be Launch Edition comes with a t-shirt and has a $30 mail-in rebate, though you aren't able to auto-notify for it at this time. I don't know if that was always the case or they hit their limit and closed it off for further notifications.
