Just curious with this RTX 2080 series, am I limiting my OC potential at all by using the G3 supplied 8 pin to dual 6+2 PIN for power? Should I just run a PCI-E 8 and a PCI-E 6 pin from individual rails for power instead? Thanks in advance!

Limiting your OC potential?  Not likely.  Should you "just run a PCI-E 8 and a PCI-E 6 pin from individual rails for power instead"?  Yes, definitely.  Whenever possible, always.

You should use separate PCIe Power Cables when there are Two 8-Pin Connectors on a Graphics Card.
You can get away then you only need a Single 8-Pin and Single 6-Pin with One PCIe Power Cable.
The 8-Pin and 6+2 Pin are the same in the since that you put the 6-Pin with the 2-Pin to make a Single 8-Pin.
They only reason they have them is because some Graphics Cards only have 6-Pin Connectors one or two and some have one 8 and one 6.
