EVGA sell multiple models such as the T2/P2/G2 apart from obviously having a different wattage for those with the same total watts e.g. 1600 P2 and T2. Whats the difference? Do the letters stand for something?

Titanium, Platinum, and Gold.        
 
 
A computer power supply takes AC power from the wall and converts it into DC power. During this conversion, some power is lost and is exhausted as heat. If a power supply is more efficient, it requires less AC power to produce the same amount of DC power than a lesser efficient unit and less heat is produced.

Another way to look at this: used chart from XrayMan post above
 
1000 Watt - "80 plus" - PSU @ 50% load:  = 80% efficiency
                                             500 Watt draw at PC = 625 Watts at outlet
 
1000 Watt - "80 plus Platinum" - PSU @ 50% load:  = 92% efficiency
                                             500 Watt draw at PC = 543.5 Watts at outlet
 
                                                               Savings of = 81.5 Watts
