Do I have to have the EVGA unleash/monitor software running in the background for the mouse to use the settings I want? Or are the settings saved to the mouse and I'm okay to end those processes?

I just like to have the least amount of processes running on my computer :)

The mouse has 512kb of onboard storage that lets you save profiles to mouse.
