That`s probably because the bridge was announced before the Ti line was.

Why does the description for the new bridge say it lights up on select GPU`s I hope to God it will light up with the 2 980 Ti SC I ordered, why wouldn`t it work on all the Ti`s ?

It should work with your 980 ti's, however, under the compatibility tab on the webpage you linked it has no 980 ti's listed as compatible.

The 980 Tis have an LED on them that lights up, so the eVGA Pro bridge should light up.  eVGA most likely just hasn't updated the compatibility page since the 980 Ti came out.

works with any GTX 700 or  after, I believe

This is not true though.  It does not work on all GTX 770s or GTX 970s, you have to make sure you have the right 770 or 970 for the LED to work.

I did a mod similar to what you're asking about. I also made the 980Ti shroud look like a Titan X. It was all very simple, no way it would damage the card unless you just completely mishandle the card itself or use the wrong tools during disassembly/reassembly. 
 

 
In the unlikely even that I need to warranty either card, I'll just do an Express RMA (I think EVGA calls it Cross-shipping). Get the new card, swap the coolers, send back old card. One of the few reasons I have a credit card. Easy peezy.
