Resident Evil 4 ... keyboard/mouse controls are so horrible. You have to use a/d keys to turn in place. Moving the mouse doesn't turn you. Only movement is s/w for back and forward.

Since there was talk of a Last of Us remake going around, I'd like to see the chance for Naughty Dog to do a remake of Jak and Daxter: The Precursor Legacy, since it's a childhood favorite of mine

The old Warcraft 1 and 2 on DOS would be amazing with modernized Blizzard graphics. I remember playing those games on my old HP computer on a CRT monitor. Good times

But seriously, Unreal Tournament 2004. Amazingly balanced skill & tactical gameplay. Movement and aim was instantly responsive, never sluggish. Could be modded to an insane degree - several game franchises got their start as mods. This was popular at every LAN party back in the day, from 3 friends to several dozen strangers. It's still a great game to this day but the graphics are from 2003/2004 - a completely different era. My brother and I still play against each other from time to time and forget about the dated visuals. The cool thing is that many mutators made by Epic and the community don't rely on graphics at all and could theoretically remain compatible with a remake. Likewise for server gameplay. If they updated the movement to be more agile in line with modern combat games like UT4, Apex, and Warframe, a 2004 mode could force the old style to retain compatibility with old servers. Though I liked the original single player campaign, I'd certainly love a more story-driven one. If you've never tried it and you enjoy first person shooters, give it a go. The AI is pretty challenging compared to modern FPS games, though there are like 7 difficulty levels and modifiable bot characteristics.
Sad thing is that this is a pipe dream. Epic stopped developing UT4 in the public alpha phase to focus more on Fortnite, which has been printing money for them because kids like silly dances... Sometimes I wonder if humanity was a mistake.

I am less for remakes of classic games and more for reimagined reboots. Tomb Raider is a great example of what a reboot can do for a series while on the other hand a remake has the limitations of the game design of the time. Sometimes that is levels that seem really small by today’s standards.

super mario world remake with modern graphics would be fun. heck any of the old side scrollers remade with modern graphics. as long as they keep that old school 32 bit feel tho lol
