So I was listening to music and lowered my 3090 fans to 15% for noise reasons, then forgot to undo that before gaming.

I usually have my GPU on a curve that prevents temps from exceeding 55c maximum when under load, but I realized my GPU was around 70-85c after about an hour of gaming.

Just wondering what actual damage is caused by reaching temps of 85c? Looking at the temperature logs (I use OpenHardwareMonitor) and doing some math, my GPU was above 80c for about 13 minutes total, and above 70c for about 25 minutes.

What are the long term consequences of putting my GPU through this? I'm very particular about my temps and never go over 60c on either GPU or CPU.

Here is the actual plot of the temps over the time the incident happened, with 80c being the red line:

No issue for the GPU die itself, should be the same for the VRAM. Why? They'll underclock to protect themselves when very high temps are reached (90+C for the GPU die, and ~105C for the VRAM).

Higher temps can shorten the lifespan of components overtime. A one off occurrence is nothing to worry about. GPU's also have built in safety features to shutdown the gpu when things get too hot. Sounds like yours didn't get too hot, but it did get hotter than normal, so I would say no damage occurred for this one event.

85C? None. The default fan profile tries to keep the GPU around 82C under load. The maximum 'safe' temp is 91C. A couple of degrees above that, as others pointed out, the GPU will underclock to protect itself.
