As far as fan profiles go I have always made a straight line fan curve from %0 @ 0c to %100 at the temp you don't want it to reach and it has always done me well. ATM I run %0 @ 0c to %100 @ 70c and my GPU stays around 60c. Turbo boost works off of temps meaning without overclocking my core stays over 2ghz with this fan curve

The aggressive fan curve is definitely the way to go with the FTW3!  Thats what I did and my temps are great.   Alternatively you can just flip on the OC switch on the card, power off / on your PC and it enables it in the bios, no curve needed in the software.

That's reassuring. This flight simulator is ridiculous. It's just going to use 90% of anything

Yes, I have no idea how to make one so I like the pre made ones. Cooler is better with electronics, that I know. 
The little switch on the card is on off I believe. I am not running OC mode.

I have the exact same case, and the airflow is fine.  I left all the fans stock, and use a Kraken x72 with the fans mounted up top as exhaust.  It may not be the BEST in terms of airflow, but it is very decent.
Currently, I have an i9-9900K and the ROG-STRIX-RTX2080TI-O11G-GAMING.  My CPU never goes over 49C during gaming, and the GPU hovers around 55C average.  During stress testing, max load on both, 65C CPU and 68C GPU, but constant max load is not reflective of what you should expect for gaming.
 
AMBIENT temperature in your house is most likely the issue.  You can have the best, most amazing top of the airflow charts computer case, and it CANNOT make the air it's sucking in any cooler, so at 80F your STARTING the case's ambient temp at around 26C.  My house is always around 68F, so I am starting at 20C.  No standard air cooler or liquid cooler can compensate for a warm room temperature, and 80F is quite warm for a PC.  Why do you think companies invest big buck in amazing HVAC server rooms?  Before Covid, I used to put my jacket on to go into ours, it's a constant 65F for our servers that run 24/7.
 
That being said, your card DOES seem to be running on the warm side.  I would start by testing this by turning your AC lower, try to keep the ambient temp at 70 if possible, and see where you're at. IF you're still running on the warm side, it COULD be the card.  I have owned many different AMD and Nvidia Cards over the years, EVGA included, and I had a few that were very hot.  After taking them apart on my own, I almost always found that the thermal paste was crap, or applied incorrectly.  I even had one card, where the manufacturer used thermal pads to make assembly easier, and the machine or person that put it together did NOT remove the plastic film on the pad which melted into the paste and made a mess.  I took lots of pictures, and made them replace the card (it was NOT an EVGA product).
 
Lastly, you are NOT running dangerously warm.  Not sure about the 3080, but the 2000x series were safe up to 85C, so you're not going to kill it.  My stance is, keep it as cool as possible (within reason) and there is less potential for problems.  
 
I don't think the case is the issue, I bet you can remove the side panels, and top panel and it would barely make a difference, try it.

After the help I got last night I took a few steps:
1. I set the cooling fans in the case to " performance" which makes the fans spin faster.
2. I installed the new 3080 precision X1 software, I was using the wrong one 
3. I enabled a custom fan control. (aggressive)
 
Now, at idle, CPU/GPU are at 35/36C, which is decent given my room temp/
Under load. CPU 40-45 and GPU 68-72. I definitely dont see 83 anymore. After hours of flight sim running, I see the GPU use around 90%, 3080 fans almost at maximum but temp is at 72 max, which seems reasonable.
Those 400w of power draw have to go somewhere and most of it is heat. I just feel better that it's now 10c cooler thanks to everyone's help!




 
GREAT !!!  Thank god you don't have to send it in for repair/replacement.  They are hard enough to buy, who knows how long that would take, lol.
 
Full disclosure, I decided to replace my H700 with an MSI case that went on sale at Best Buy (and I had about $100 in reward dollars).  It this one:

It caught my eye, and I have an MSI Z390 Carbon AC motherboard so I can control all the lighting with the same software (except the Kraken).  This case is VERY similar in airflow to the NZXT 700 series, you can see the vents around the edges in the pics.  I basically have the same exact temps, and no issues with airflow (some of the reviews trashed this case).  I love it.  I was going to replace my case with your originally, so I had the front USB C port.  I have an new iPhone with a USBC charger and I hate reaching around my giant case to plug it in to sync.  BUT, being that the NZXT 700 and 710 look exactly the same, I wanted  a change.
 
The only mod I made to the new MSI case is, I reversed the top fans to make them exhaust instead of intake.  I'm sure MSI made them intake to make the RGB fans look prettier, but it was a dumb move, and I fixed it.  :P
 
A little tip on the NZXT case...KEEP THOSE DUST FILTERS CLEAN !  They worked very well on mine, and got quite disgusting after a few weeks.  


I mean, I am newbie so I did some research. People seems to say the H710i was ok with airflow and easy with assembling which were my 2 priorities. Dont want to mess with cable management. 
For entertainment purposes... After 8 hours of putting everything together (right?), my pc wouldn't turn on, like nothing, no lights no nothing... I ended calling ASUS (MOBO) and they said it might be my power supply (new EVGA 1000W) or my MOBO defective. So as I was removing the power supply to send it back... I realized that I didn't plug in the 2 motherboard cables... Sad...
Then I finally get everything going, install my 2070S temporary... and every time I load a game, giant loud BEEEEEEEEEEEP. then nothing.
I figured the card alarm was tripped because of the game demand, that was my theory.
Then I got the FTW3 3080, with a lot of luck and perseverance and same thing... BEEEEEEEEP. not only launching the game but in game.
I did some research and couldn't find a straight answer. The loud beep was the exact same sound as with the 2070S. I thought well EVGA must use the same alarms. Or could it be a temp alarm from the MOBO? Maybe a case alarm? 
Then I called EVGA... very nice customer support... They helped me realize that the beep was not from the PC but from my UPS because the PC was drawing too much power.
So yes, I feel stupid, but I have learned a bunch of new skills and hopefully my story is entertaining ...

Out of all the online reviewers, there are only a few I trust.  HARDOCP, sadly is gone (only forums are up) and Gamers Nexus.  Nexus puts the H700i (and the H700) near the top-middle on cooling performance charts, not the best, but certainly decent and better than alot of the competition.  I love the case, I am keeping it even though I got a new case.  It is very well made, super easy to work in, and the thing is a tank.  
 
I was not a big fan of NZXT until I got an S340 Elite a few years ago.  It's not made anymore, but it has the same style as the H series.  That case is 4 years old now, and I just threw together a system for a friend of mine, who is on hard times due to Covid and his computer died (I had some old parts laying around).  It still looks amazing, cleaned up perfectly with a bit of damp cloth, and my old Kraken x62 and the Hue Kit with the RGB strips still work perfectly.  They make quality products, you made a good choice.  That's why I'm keeping my H700, I may use it again in the future or donate it to a friend or family member that needs a new PC.
 
I really only switched cases out for a change. I am not really loyal to one brand, with the exception on Nvidia GPUS....but we'll see.  If I get my hands on a 3080 before the AMD launch, fine, if not we will see how they perform.

Lian Li LanCool II Case setup for push/pull airflow.  Two intake fans in front and one on bottom, two outflow fans on top and one in back.  Arctic e34 Duo Air cooler setup to flow air from in on front to out on back. 
Thermals including full load temp... ( current temp left column, lowest temp middle column, highest temp right column )

I have the same N3XT case as you.

I found that stock fans are not pushing enough air through this setup.

I picked up 3 noctua 120mm 2000 rpm pwm's for the front and a noctua industrial 2000 rpm fan for the exhaust.

I find that 60 - 65% fan speed for the exhaust is just good for noise and heat removal to keep thermals on 4K RDR2 at 75 Celcius and below, but that's with power settings on the 3080 set to 95%.

The 3 120mm's have not arrived yet for the air intake.

I'll post my findings on their efficacy soon ( arrive later tomorrow ) .

From the pic above that looks like an NZXT510, or similar 500 series model?  I love their stuff, but unfortunately the 700 or 710 non-i series are the only ones to get decent reviews.  I have one of each and even with the front panel removed mine barely changes temp.  Those Noctua fans might work like magic though, good luck.
