Got my hands on a 3090 FTW3 hybrid and should be here soon. In the meantime I’m wondering though if the AiO for it can be replaced with an Asetek AiO normally used for CPU’s? Reason being this card has a 240mm cooler and I’ve been using the NZXT X72 360mm + G12 adapter with my 1080 Ti and it looks great in my case while performing extremely well. Having a 240mm in its place is going to ruin the aesthetic, plus moving up to a 360mm AiO would give a small advantage in temps. Anyone have any experience doing this or know if it’s at all possible?

If you have the skills, anything is possible.  To achieve what you want, its just a matter of adding or removing atoms in the areas necessary.
Just be aware that you can't modify anything existing on the card without voiding the warranty, so if you have to modify something, make sure you save the original and create or modify a replacement.

Rectangular pattern (hybrid AiO) vs Square pattern (other AiOs). I wouldn't do it, but then again I don't have a drill press.

The CPU AIO cold plate is either concave or convex while the GPU AIO is flat. You’ll need to level the surface

Thanks for the replies. I hadn't considered the cold plate level, that definitely would have an impact. As for the rectangular vs circle pattern, I think there may be a way around that, but I'll need to have the card in hand to see for sure. I may experiment with this idea once the card is here, will update this post if I take things that far. Thanks again all!

If you're going to go to the trouble to replace the AIO why not just go full custom loop?

Cuz I already have an AIO that I’d want to use, and to go custom loop would require more $$$.

You need to make a bracket because the mounting holes for the 3080s are different from any other GPU. This is possible, but you'll have to again make your own mounting plate somehow or the old Linus trick and use zipties. 
 
You will not see a performance gain, like others have said the mounting plate for the EVGA is made for a GPU, more than likely you'll get equal or less performance. 
 
Also, make sure you find a way to cool the chokes and VRAM, they get pretty hot. The plate that is currently being used has a patent to actually make contact to the EVGA AIO and therefore the memory is actually cooled by the AIO also.
