Is there honestly a difference between them or is it just the name and custom keys & media stuff that each may have that differentiates them?
 
From testing out the Corsair K95, K70 I did not notice a difference in quality vs a Ducky Shine or das keyboard. The one thing that was noticeable were the obvious media keys or volume knobs one had over the others.
 
Is there a difference in quality of MX Switches each brand has or are MX Switches universal?

    I have no experience with mechanical keyboards yet, so I can't address the first question.  But from my own research into them, I can tell you the switches are the same on all of them, they're made by a company called Cherry (which is why they're called "Cherry" MX red, blue, etc)

    This makes sense at the same time it pisses me off; paying $150 for a Ducky Shine 3 with 1 year warranty sucks versus Corsair or Logitech's warranty. I guess the $ is only for the "Pretty" led lights. I should had done more research as I thought the quality of MX switches were different amongst Keyboard brands. If I would had known this I would had gone with a Corsair K95 for the custom keys and volume knob.

    Between the majority of mechanical keyboard manufacturers all the "Cherry MX" switches are provided by the Cherry Corp. The general difference between them is Build quality/design and features such as Corsair k95's 18 programmable macro keys or Ducky Shine's custom LEDs. 
     
    There are 4 main colored switches that provided a different tactical feel. BLUE, BROWN, RED, BLACK, and now there's GREEN and CLEAR switches available on very select few models.

    Here's a quick reference chart on the main types:
     
    MX Clear's are nearly identical to the Green's but don't click. For a boutique mech keyboard The CODE is pretty nice... but waiting a year for another batch of MX Clears is kind of silly.

    CORSAIR K70 Black is for me best keyboard at this moment.
    I mean look and experience of people.
    I mean keyboard and for guys over 25 years.
    Because it's elegant and excellent not only for gaming, and for office is excellent.
    I don't need side programmable buttons as on K95, I never use them on G510. 
    I love Logitech too, but new Logitech keyboards can't compare with CORSAIR.
    Now some guys order K70 on same place where I graphic card, because no CORSAIR in Serbia and soon I will order too.
    Space button on G510 start to make problem at that is well known issue.
    And big CORSAIR surface for keyboard and mice is excellent.

    cherry makes some nice boards, they are in just about every retail POS system out there and last a good while, generally what goes bad is the cord.

    Average Mech Boards are $80+ 
    Average LED Mech Boards are $100+

    And while Ducky may be more expensive, Having tried a Black Widow, a Corsair K60, Das, Logitech 710+, and owning a Ducky I will say that Ducky uses much nicer quality Keycaps than Razer and brands that use similar keycaps.
    I havent tried a Filco yet, but I hear they and Ducky are pretty much the best of the best.
    I'vs also ordered a Coolermaster Mech Board but it hasn't arrived yet.

    I bought the Leopold Tenkeyless keyboard because I did not need any fancy macro buttons or features and just wanted a quality full sized keyboard which took up as little space as possible.

    I like Corsair keyboards and now that they have bought out raptor you can see some influence of raptor on their newer lineups
