I have the EVGA GTX 550 Ti.
This card has (2) DVI connectors and (1) mini-HDMI connector.
 
I don't currently have the correct cords/connectors to try this, but was wondering if someone here knows..
 
Can I plug in three monitors.. but only use two at a time?
 
I know it can't run three at a time.  I currently use two Acers, but was hoping that I could connect the HDMI to my TV, and maybe change a setting that would change the display outputs from both DVIs to maybe (1) DVI plus (1) HDMI..
 
make sense?  possible?
Ideally I am trying to be able to send video to my TV, without messing with cords, and only needing to disable one of the DVIs to get it to work.

It's likely going to give you problems as the HDMI port and one DVI port share the same digital output internally.

The 550 Ti won't run three screens on its own. The max supported number of monitors for this card by itself is two. You will need another 550 Ti running in SLI to have three screens.

Update:
It works as expected!
 
I have 3 monitors plugged in.
All I need to do to use the 3rd (TV via mini-HDMI) is disable one of the two DVI monitors.
