I've got a GT 440 and 3 monitors.  The 440 has 2 DVI outputs and 1 HDMI output.  But when I open NVIDA Control Panel, when I set up multiple displays, it says "This GPU supports up to 2 displays."  Is there a newer driver update out there somewhere that pushes the GPU to support all the displays available on the card?

No, only Dual GPU cards support 3 Monitors. The HDMI shares one of the DVI signals.

So what is a good plug & play Dual GPU that we can use for this?  We are a church and have a brand new windows 7 computer with the GT440 & want to display our normal monitor in the sound booth and have 2 additional screens that are extended, but identical to each other?

There are a few cards like Galaxy's that support up to 5 if you really want to have multi monitors on one card

Do you have any onboard video capability?  That is, on the 'motherboard' part of the back panel, is there video-out options on that?  Depending on the system, you may be able to run the onboard video (which can output to a monitor) alongside the GT440 output (which can output to 2 monitors).  That wouldn't let you do 3d gaming across the 'three monitors', but for something like watching movies or powerpoint presentations or things like that, it should work well enough.

thank you there is no onboard video...  There is only audio, firewire, Sata, ethernet & USB on the motherboard

Hmmm.  Well, you'll need a second video card, then (assuming your motherboard can support it) or an AMD (Radeon) card...they can support three monitors off one card without issue.
