I would say it depends on how long/short you are willing to wait to start up your video editing. If you can find a 1660 super at a good price then I would go for it.
Reason being is that with the current market for new cards being very bad with terrible scalper prices(Given they are going down) and the lack of supply causing about a several month wait in a queue system to get a new gen card for a good price.
I think of it like this unfortunately you would probably pick up the 1660 super about the same price as 3060 MSRP would go for then you use the 1660 super as a interim so you can hold off until you find that good deal or email notification that your new gen card is in stock at MSRP.
You would be surprised how patient you can be when you already have something to hold you off.
That is my opinion in a logistics view. I agree with ZoranC that you should check out pugesystems.com because all this is meaningless if you find out the 1660 super wont perform to your standards even if only temporary.
