EVGA GeForce RTX 3060 Ti - Having Trouble with 2 x 4k Monitors With HDMI Soundbar for Audio

This is my first post so please forgive me if I made any mistakes; but I did do my due-diligence for searching the forum and online before I posted this issue for help.
System Specs:
Motherboard: Gigabyte - Aurous X299 Gaming 7 (rev 1.0)
Processor: Intel Core i9-7940X Skyline @ 3.10 GHz
Ram: 32 GB
Hard Drives: 2x NVMe 1 TB (Running on Raid 1), 1 x 2 TB Spare old fashion spinning HD
OS: Windows 10 Pro, Version 21H2, OS Build 19044.1949
History:
I had been running two Acer Preditor 4k monitors with Nvidia GTX 1080 with Samsung Sound bar connected via S/PDIF Optical cable for audio.
I decided to upgrade the video card to EVGA GeForce RTX 3060Ti 8GB, the two monitors to Samsung Odyssey G7 28 inch 4k UHD IPS Monitors (LS28AG700NNXZA) and also the soundbar to Nakimachi 9.2.4 Setup for audio which supports Dolby Atmos via HDMI.
The Card works great so far with the two monitors and the sound bar is currently connected and gets detected under NVIDIA Control panel and provides option for selecting the monitors and/or audio via HDMI.
Current Issue:
For some reason when the two monitors are selected they work fine, but when I click on to activate the HDMI port for audio which is connected to the soundbar, it disables the one of the monitor.
Hence, it only allows me to select two out of the three options that are available under the NVIDIA control panel, no matter what I tried. Either I can have 2 monitors or 1 Monitor and the Soundbar.
Troubleshooting tried so far:
1. Clean Nvidia Driver install to the latest driver - Still same issue.
2. Uninstalled driver completely; rebooted; let windows use the generic driver; rebooted; Installed the latest driver - Still same issue.
3. Disconnected the sound bar completely; connected the two 4k Samsung monitors and connected one of the old Acer Predator monitor via HDMI Port - Same issue issue. It would only allow me to use 2 monitors at a time; basically same issue.
4. Uninstalled driver completely; rebooted; let windows pickup all the three monitors; rebooted; Installed the latest drivers - Still same issue. Out of the three monitors it would only allow any two to be selected.
Personal Thoughts at this point:
a. 3080 Ti should work and/or support up to 4 monitors, I am only connecting three and would only allow me to use two at a time.
b. Figured the display port next to the HDMI port shared the same bandwidth so only one would work at a time; so swapped DP and used the two far end DPs and left the 3rd DP empty next to HDMI port and connected the third monitor to that HDMI, but still same issue precisest.
c. Wondering if the card can only handle two 4k displays, but after doing some digging online, it turns out it should easily be able to support 4 monitors.
5. Removed both of the new Samsung 4k monitors and installed the old Acer non IPS monitors along with the soundbar - Still same issue.
6. Also installed the old GTX 1080 along with the new RTX 3060 Ti to see if I could pass the audio through the old card and run the two monitors with the 3060 Ti.
- Uninstalled driver completely; rebooted; let windows see both the GPU's, rebooted, and then performed the latest driver installation. - For some reason the issue still persists.
I would love to get any help with this frustrating/strange situation as I have never had any video card that has specially not worked with just 3 monitors; Before I bought the 2 Acer Preditor monitors I use to run 3 x 24inch monitors without a hitch on the GTX 1080. But now it seems that I can only run two 28 Inch IPS 4K monitors with the new RTX 3060 Ti and just want to get the audio through HDMI, which I thought would be pretty easy and a good upgrade but it seems like it's causing my hair to fall out :)
I can use any help or suggestions or guidance I can get, my goal is to get the 2 x Samsung 28 4k Monitors along with Dolby Atoms to be able to pass through the HDMI port to the soundbar; Thank You.
