EVGA X299 Dark - Overclock options

Hello!
 
I came from a ASUS Tuf Mark2 board to this, and I can't seem to figure out how to lock in the multiplier so it doesn't bounce per usage, (this is how I had it before). 
 
I don't know if there is an advantage to that or not. Input welcome!
