I'm just about to install my new EVGA GTX 98SC's.  They are replacing EVGA GTX 780's.  Right now Nvidia driver 340.52 is installed.  Will I be able to boot up the 980's on this driver and then install the latest from Nvidia, which is 344.16?  I tried installing the 344.16 driver with the 780's in the system, but it says it cannot find compatible hardware, which I take to mean that this driver is specifically for the 900 series cards.

Yes, you can boot up with 340.52 installed. As soon as you load into Windows however, a generic display driver will be installed. From there you can uninstall and restart.

You are better off uninstalling all NVIDIA Drivers and EVGA Precision X if installed before you install a new Video Card Model.
Unplug your Network card before you start, Windows 8.x
Do not save any profiles when you uninstall EVGA Precision X.
Reboot your PC and allow the Default Video or VGA Drivers to install and then reboot one more time.
Logon and then turn off your PC.
Remove the GTX 780 and install your GTX 980 and allow the PC to install the default VGA drivers and restart your PC.

On a Side Note that I have learned to do is delete the two Keys listed below.
    HKEY_LOCAL_MACHINE\SYSTEM\CurrentControlSet\Control\Video
    HKEY_LOCAL_MACHINE\SYSTEM\ControlSet002\Control\Video
It will error and say it cannot delete the Key, but that is ok as it cannot delete the Key itself nor the Default VGA Driver GUIDs.
What it will delete is all the GUID's for NVIDIA's Drivers. REBOOT After you delete the Keys.
This is the last item that I do before I install a New Video Drivers.

Logon your PC and now install the NVIDIA Drivers.

Thanks for the advice.  I'll follow that procedure first thing in the morning.  I just finished the yard work for the weekend, and I'm pooped.  (Once I passed 65, I find I tire out a lot quicker than I used to.  This gettin' old is gettin' old!)

I would recommend to not delete any registry files, you often do more harm than good.
