I've noticed that E-LEET reports different core temperatures than SpeedFan. E-LEET reads about 4°C higher when idling and about 4°C lower when at full load. Why would this be if they should be reading from the same sensors? And which one should I trust more?

If you have a 500 or 600 series card(s), then you have different sensors they could be reading from.  If you have older cards then that, they would be reading the same sensor and it wouldn't make much sense.  Although sometimes when monitoring the same items, ie; temps, using more than 1 program at the same time, they can conflict with each other and cause "off" readings.
