Should I go with RAIDed SSD's or just one bigger one?

I use a lot of texture mods in Fallout 3 and I can feel the hard drive lag from loading all the textures. Will I get faster texture loading with SSD's RAIDed as opposed to just a single?

I will be getting Intel G3 drives, is it a hassle to maintain RAID setup with these drives? (TRIM,etc.)

No hassle with trim because there is no trim in R0, raiding them will get you bigger bench scores but most probably not much more except for specific job types. In a windows environment very doubtful you would notice any change from single ssd to raid 0 ssd's. Biggest asset of ssd compared to spinner drive is it's lightening fast access times.

Im still debating upgrading my raid 0 velociraptors for a intel 320 ssd, i was debating just like you to get raid 0 ssd. If i get a ssd i think a single is the route im now leaning towards.

Ok, IMO that using RAID 0 with your SATA 's will give you about a 70% read / write increase for long strings of data.  It should give you at least a 40-50% increase in IOPS.  So go for it.

I still use my VelociRaptors, just not for the OS which is now on 90 or 120GB SSDs. Great combo. And still have those WD Black and green for data and storage.
