Since you have a Switch 810 with a lot of room up top, I would go with one of the XSPC RX360 Extreme kits and just add some GPU blocks.

    Performance-PCs - $299.99

That still uses the dual bay reservoir, but has a better pump.

    EK-FC680 GTX+ $109.95 x 2

Throw in a few extra feet of tubing just in case, and add the SLI fitting mentioned above.

As for coolant, just run distilled water along with the kill coil from the kit and you should be fine.

I am more inclined to go with Kody's list of hardware, but you can also use our water blocks as well.  I know many people have had various complaints basically saying they are substandard because they are made by Swiftech, but I can speak from experience I have had them personally on 480's, 580's and 680's with ZERO complaints.  Most benches show them within 1c of the EK blocks.

Also, I would avoid the solid SLI connectors.  Now I will not argue that they look WAY better, but here is the issue.  At some point, it is likely that even if it is 3-5 years down the road, you can have a problem.  Well, with a hard connector you have to drain, remove the card refill, test, swap cards etc etc etc.  I recommend using a piece of tubing and either barbs or comp fittings.  That way is is malleable.  This is how I did my own testing when one of my 580's croaked, I slid both cards out, bent the tube slightly and rested one cards bus connector on top of the slot and reinserted the other card, then tested, this way I didn't have to remove anything to test, it just made things easier.
Day by day those connectors are great, and maybe I'm negative, but I like to think ahead to make things easier to troubleshoot in case there is a problem, because regardless of the quality of any product, things eventually do wear out.
Also, make sure you keep the original heatsink/fan and the fasteners, incase you ever need to RMA you need to be able to return the card to the state it was in when it was shipped out.

I have love the EVGA Swiftech block on my 680, so I agree with Dave. Since I've installed it my temps have been awesome and I love the way it looks in my case (not the most important thing, but important to me). In fact, I've helped two buddies move ti WC and both of them went with the EVGA/ST blocks because of how much I raved about mine. I'll be adding my other 680 to my machine soon when I pick up a 660Ti for the second rig and will without a doubt grab another EVGA block.

Really the only reason I didn't recommend it was the price. The OPs budget is already close, and I didn't want to tack on anymore and possibly detract him from making purchase.

Yeah, good point on the price, missed that part  :)
EK always makes great parts, so that is a great recommendation.  Good bang for the buck build.
