EVGA 3090 FTW3 fan-profiles

Hey everybody!
 
Maybe someone can help me with Presicion X1 and the fan-profiles:
For example I have tried the quiet-profile ...
The fans run with about 1600 rpm and the core-temp increased to over 85 degrees.
From what temperature does the card turn all fans to 100%?

    The 'Quiet' profile caps the fan speed at 50%, at least it's 50% for me..You can see the different curves in Fan Curve Control.

    Most ppl create their own custom curves to balance cooling and noise to their liking..Open the Fan Speed box..Click to turn on Fan Curve Control..Drag the setpoints to where you want them..Then click Apply.

    You can delete setpoints by clicking on them a pressing the keyboard Del key..You can add setpoints by clicking anywhere along the curve line..Then click Apply when you're done..You can change the curve to steppings and vice-versa by double-clicking anywhere inside the Fan Curve Editor.
     
    If you wanna save a curve to a profile, click a profile number and then Save..If you wanna load a Profile, click the Profile number and then Load..You can also make keyboard hotkeys for profiles.

    I normally run a curve for my card that puts the fan to 100% at 70C..But you can make your curves however you want to.

    That is my issue ... 
    My card runs with my own profile (or for example with the 'quite' modus) of about 80 C. 
    And in between some gaming session my card puts the fan to 100% (should be about 80 C). 
    So there is a 'why' and from what temperature?
    Why does my card put the fan to 100%?
