Yea I'm not sure if buying a PSU right now makes sense either. Very likely new models will be rolling out with 40 series. But then again, if an 8pin adapter will work, might be a chance to get a good one for cheap, just with a bit more cable clutter to deal with.
I was thinking the same thing but honestly the only thing the 16 pins do is clean up the cable clutter a bit and potentially power limit your GPU. The 4 sense pins in the 16 pin, from my understanding, are only there to tell the GPU what capabilities the PSU has so that the GPU will automatically power limit itself if the PSU isn't up to the task. Using an adapter, assumingly, won't power limit it at all. That said, PSUs that are 100% ATX 3.0 compliant are going to have more efficiency and durability requirements than current PSUs.
