Looks like this is the only thing that I will be missing, the thing with the spring screws you were talking about. The disassembly of the 3080 Ti Ultra is sooooooooo much easier than the Hydro Copper! I also need some 2.5 Thermal tape. Cant really see any other differences in the design.

Thermal pads:
 
Thickness & hardness (compress ability) -- is critical
 
The heatsink Must make contact with the GPU die, thermal paste Must cover the entire GPU die.
 
Unlike the CPU, that is NOT a heat spreader on the GPU, that is the actual die (chip)
 
You must keep the heatsink flat/level with the GPU die & not let it get crooked as you want full contact.
 
Hard pads will not let the GPU make contact, they will not compress
 
Thick pads ... prevent contact
 
Thin pads will never get contact or any compression & will not transfer heat. 
 
The best testing it a trial assembly to make sure contact is being made.

Now, it doesn't say anything about a back plate on the 3080 Ti FTW3 Ultra, but it does mention it in the 3090 Ti FTW3 Ultra.
 
Would it be overkill to place thermal protection on this back plate? 
 
Another thought going through my head would be if there is a specific thermal paste we are using on the GPU itself, or standard Thermal paste will do?

I'm sure once I get this metal heat sink off the board from the hydro build I'll see what needs to be covered, but for now just getting the ideas.

The metal heat sink is a bit tough to remove. I am thinking that a little warmth could assist me in removing it. I don't want to put too much pressure on the board for fear of breaking it. So I'm taking my time and again, thinking it out.

wrap that hydro card in a heating pad for about 2 - 3 hours
 
there are other ways, but the heating pad should never get warm enough to cause any issues. 
 
Never use an oven that is used for Food, think heavy metals & other nasty stuff
