The issue with Folding servers not assigning work units is that their various "help us with COVID" advertising has resulted in a massive overload of new folders, to the point they just can't generate work units fast enough to keep up.
Optimally this will change over the next few days, as they realize that they HAVE so much help and get serious about generating work.
To add to the issue, they've had a GIANT render farm company join the effort, that company ALONE has added over 6000 Tesla GPUs to the mix (out of their 45,000 or so).
Also, it's not Stanford any more, and hasn't been for a short while - Pande Labs handed off the project to a group out of George Washington University in St. Louis, I'm guessing because Dr. Pande wanted to be able to retire fairly soon without shutting the project down.
