Second, what are the benefits of overclocking via voltage curve vs. just setting an offest?
Also, if I enable the voltage control in Afterburner what should I use from the four options?

Sajin's guides are the best! The custom curve overclock usually happens with less voltage, and that equals to less heat. 
You have a third party, not a reference board or either MSI boards.

Being able to set your frequency/voltage where you want it is the biggest plus when using the curve to overclock versus the offset method. All four voltage control options seem to work the same to me.
