Z270 Classified K - RAID setup question.

I am about to build a pc I have been collecting parts for over the past year.  I had planned to have the drives set up in RAID1.  I was going back through the motherboard book and noticed something troubling, that my initial RAID setup I had planned may not work.
 
Seems it's a bit of a guessing game if this will work or won't, so I'm posting this here for confirmation of if this setup will work, or if I will have to just run the drives without RAID and do periodic backups instead, or just have some of the drives in RAID1 and the others without RAID and do periodic backups on them.
 
Here is the drive setup I had planned.  I assumed with 8x SATA3 that I wouldn't have any issue with running these in RAID1, but I may have been wrong?
 
1x 250gb NVME (on board, O/S boot drive)  No RAID, will have a partition on 6tb drive for backup.
2x 500gb SSD (PC programs)  RAID1
2x 1tb SSD (Steam, dedicated games drive) RAID1
2x 6tb HDD (Mass file storage, 250gb partition for o/s backup)  RAID1
 
 
Any help or confirmation on this is appreciated.  Worse case, I think I may have to drop something like the 6tb drives from RAID1 and just schedule a periodic backup on them?

    Starting on Page 57- p76 of the manual has detail about RAID on this MB
     
    What CPU ?
     
    Best for Backup drives to be disconnected ... cant get infected or encrypted when they are off line

    I'll have a 6700K in it.
     
    And I read through the manual for this mobo, which is what prompted me to get some confirmation of whether or not my planned drive config would or would not work, as planned.
     
    The issue is, there are 8x SATA3 stated.  If you use the SATA Express, then those other 4 SATA3 are disabled, which would give you 6 (4x SATA3 and 2x SATA Express).  So it's more of a question like, if no SATA Express are used, can RAID1 be used on the 8 total SATA3?
     
    I hadn't really considered drive encryption as a problem as I generally have avoided it by disabling any remote access options.   If I'm not able to run them as RAID1, periodically mirroring them on their secondary drives isn't a bad thing, and it's certainly protective against any type of encryption or corruption.
     
    Appreciate any help/clarification.
