I sell mine first and use the money to pay for part of the new ones.
My last upgrade was three R9 290s to a single GTX1080ti. Old cards sold for 600 with water blocks and the new card was $850.

The best part is my new card is selling for around 1,500-2,000 now.

Do people actually pay those ridiculous prices?

I typically sell mine. When I upgraded to my 7700k, I sold my old 4770k in a full build along with my old Titan X(900 series) for 1000 bucks. Was a good enough deal for me, as I turned around and bought the EVGA 1080 hybrid cooled card for 600.

I recently(last November) sold that same 1080 to a friend for 400 after I bought my 2080 Ti, although he still has to pay me...  Probably the last time I sell anything to him.

Will try to sell it. If no one wants it, I will just keep it or give to a friend.

If ya buy the flagship model the performance will usually stay relevant until it croaks 5+ years later. That way you don't accumulate a pile of outdated GPUs and get to enjoy high-end performance for a few years.

That said I still have an ancient EVGA GTX 480 FTW Hydrocopper and a Foxconn 8800 GTX 320MB that won't die, but both sure do generate a ton of heat. Never did figure out what to do with 'em as even the 480 isn't suitable for Folding anymore.

Ended up e-wasting a GTX260 and 560 due to nothing to use it on etc.  Other cards I gave away/sold.  My 780 got e-wasted because it died 6 months or less out of warranty.  First card I've had randomly die like that since an early 2000's Nvidia card (I think it was a 6600 or similar).

If you have more than one card, sell one and keep one, just in case you need it for testing purposes, such as if your existing card has problems.  My old card came in handy when I was having issues with the new card; it help diagnose that the problem was the new card.  Keep as backup in case you have to send the new card in for warranty or repairs.

I should do that but for some reason I worry I might regret getting rid of one of my older SLI GPUs.  I like keeping some electronics for a sentimental, story filled and collective aspect.  My 780s are my first SLI custom cooling GPUs.  My GTX 480s (EVGA took them*RMA*) were my first air cooled SLI.  Wish I still had them cause they are a great story piece but on my 780s, I'm thinking of selling the 2nd hander I got from Ebay and keeping my original but I'm being silly about it and like the way they look connected together via SLI fittings. lol

I usually keep them as a back up or I give them to a family member.
Gave my 770 to my family member when i upgraded to a 1070.
They happy = me happy

is $600 a bad price for three cards under water?

I sell the old card(s) to recoup some of the cost of buying a new one. makes the new one seem like a few hundred dollars cheaper, I'll be doing the same with my two GTX 1080 tis when I upgrade to... whatever I'll upgrade too next, likely something that isn't yet out.

No, I was talking about the $1500 - $2000 per card price.
