Should I go Xeon 1630 V3 or keep the i7-5820K

So I am slowly piecing together my next build solely for gaming and folding.  I picked up a nice used Gigabyte X99 Ultra Gaming mobo with an i7-5820k.  The 5820k's 28 PCIe lanes is making me re think about going for a used Xeon E5-1630 which has the full 40 PCIe lanes and is a hyper threaded quad core.  I plan on running two GTX1080ti's and running a NVME SSD.  But I'm not wanting to bottleneck the GPU's.  I'm looking to game on an ACER Predator X34 with little to no compromises in performance.  So my biggest concern is the PCIe lanes with the 5820k.  Would losing two cores to gain PCIe be worth it in this case?

    not really, it will run just fine with sli at x8
