Very nice setup there. I'd love something like that, but my kids would destroy it.

Have you tired iRacing yet? i use a setup like yours but i found it best to overlap the end lcd's over the middle one ( middle sets behind the end lcd's) as it cuts you bezels in half and doesn't make them looks so wide,, here is a video of mine on iRacing showing the bezels setup like that

That is one very nice setup.  I too would have issues with a setup like that due to the kids.  As it is, I have to keep them away from my rig (that's why they have their own!).  Great job.

I'm in the process of building me a rig and had this same thought. I found that a 49" such as the Samsung G9 would give good immersion, but the monitor isn't very tall and I feel like this would annoy me greatly. I went with a triple monitor setup with G7's, but this takes considerably more space and is also more expensive than a single 49 (Plus you'll need a triple monitor stand). Triple monitors should be more immersive since it should cover 100% peripheral view on the sides and be taller than the 49.
For the most immersive experience you need VR for sure. It can also be cheaper depending on the headset and takes much less room. The downside is that you can't see the wheel buttons for example and the resolution wouldn't be as crisp as monitors.

Here's an interesting video comparing all the options I mentioned:
