Which EVGA 1080 Ti card will be more quiet at stock speeds: SC2 or FTW3?

No idea.. neither have been released yet.
Most will suspect FTW3 because of the 3 fan design. Until they are released, noone will know for sure. I suspect the ftw3, but again, no way to answer the question accurately at this time.

They are generally very quiet until reviews are up, and then they link the reviews in the forums. They will also put up announcement pages as well as review threads.

I imagine the FTW 3 will be louder at full throttle. But with three fans she probably won't have to spool as high as the SC's under standard load so overall she should be quieter. On the other hand, smaller fans need higher RPM so I could be wrong. 1070 comparison from guru3D between the ROG Strix and the SC. In these reviews the Strix is a little louder but also uses a different kind of fan which is supposed to improve air flow providing better cooling, possibly compromising noise abatement. Whereas the SC 2 and FTW 3 fans look similar, differing in size only(?) and we've yet to see the resulting acoustic effect. I've read that the GTX1080Ti FTW3 will have triple 100mm fans, just like the GTX1080 FTW/Classified coolers do, where the normal and SC variant are using 90mm fans. So I guess you definitely don't need to let the fans spin faster on the FTW3 versus the SC to maintain better cooling at the cost of noise. Looking at the clock speeds, FTW3 is the highest that EVGA offers. There are other manufactures that are offering > 1.7GHz speeds if that's what you want.

I had to cancel my FTW3 pre-order since I couldn't risk it not fitting in my Cooler Master Elite 130 (too tall!). Still optimistic the SC2 will be nice and quiet! Since I'm gonna game at 1440p, I might even underclock it down to stock/OEM speeds for an even more quiet experience. Looking forward to fiddling with Precision XOC!

I don't think you'll get away w/ under clocking unless your 1440p is 60hz, I'm at 1440p 144hz and my 1080ti FE boost clock at around 1900mhz on ultra settings in several latest games barely maintaining 120-140 fps w dips down to 100.

Yes, I have G-sync as well, it definitely helps sync the frame rate for a smooth play.

I'll post a clip HWinfo after a BF1 session and you can see that the fans averaged around 1900 RPMs, I don't notice the noise while I'm gaming. After messing around with settings I have found that using a FPS cap set just below the max refresh rate I had amazing stable performance. The reason for not using Vsync is due to input lag it cause and with the FPS set at 139, 5 below the monitors refresh rate, Gsync stays engaged. Here is a HWinfo clip and a graph of BF1 in case your interested.
