Let's say you make 2 pizzas in an oven; both of them on sheets. If you take them out of the open and place them on a pad on your counter, and then point a fan at one of them, would you say that the one with the fan pointing at it cools down QUICKER? Would you say that the one with the fan pointing at it cools the top quicker than the bottom, since the lower portion and sheet don't have air blowing on them? Therefore, would you say that the one which just sits there without a fan blowing on it will cool down MORE SLOWLY and MORE EVENLY?

Just wondering. Not that it makes any meaningful difference to me. Someone said that one cools quicker and less evenly than the other, and I agreed that they have a point, even if meaningless.

    Yes it will cool faster with a fan on it
    Yes the top will cool faster than the bottom where the fan does not blow.
    Heat rises and also goes from hot to cold.
    So as the top cools the heat with rises to the top where it is cooler.
    And some of the sauce will evaporate on the top causing even more cooling effect.

    Yes, and the pizza without a fan blowing on it might even taste better too, if you're lucky 


    The pizza with the fan will have a more concentrated sauce cause some will evaporate so it may have more flavor.
    And less likely to burn the roof of your mouth, that alone will make it more enjoyable. I hate when that happens.
    But if you get extra cheese to cover all the sauce, all bets are off.

    You might want to look at Sous Vide cooking. When you put like a steak into a plastic bag and put that plastic bag into water circulating at exactly 129.5 degrees you end up with a perfectly medium rare steak in about 45 minutes and about 1 hour and 15 minutes if the steak is frozen when you start. If you put that same frozen steak into 129.5 degree water that is not moving it's unlikely that steak would even be thawed in an 1 hour and 15 minutes...
     
    Another example would be to pour a glass of warm water then stick one hand under the faucet and the other into the cup of water. The one under the faucet will feel warmer because of the motion of the water over your hand.

    Don't do that, a fan will dry out the top layer of cheese and it will have a thin dry skin on it...sounds nasty
