In November 2020, @kopite7kimi shared the first rumoured specifications of the RTX 3050 Ti, which he claimed to feature a GA106 GPU with 3,584 CUDA cores. However, that doesn’t seem to be the case anymore, as the leaker now claims the RTX 3050 Ti will come with 3,072 CUDA cores. Moreover, he added this SKU will come with the GA106-150-A1 GPU and 6/12GB of GDDR6 memory.

As for the RTX 3050, it was first claimed that this SKU would be powered by a GA107-300 GPU with 2,304 CUDA cores enabled, featuring a 90W TGP, but that has changed as well. According to the updated specifications, the upcoming graphics card will pack a GA107-350-A1 GPU and come with a higher TGP. This SKU should come with a 4/8GB memory configuration.
Considering the “A1” naming in the GPUs of the RTX 3050 series SKUs, it seems likely that these graphics cards will use Nvidia’s anti-mining technology, which has been implemented in most RTX 30 series graphics cards at this point.

My only concern is with having more and more skus will this result of less GPU availability overall.

You have to wonder what NVIDIA/AMD are trying to do.  Both are releasing lower level cards when the chip shortage is still going strong.  Is it to possibly counter Intel, or a case of "we've always have SKUs in this bracket?"

Whatever they produce will sell quickly, but what existing SKUs get cut back?

You should know the answer to that. Lower end model chips come from chips that failed to perform at a certain performance levels. So no, it will not affect existing SKUs.
