This is what i have came up with for now, kinda wanna go 10900k but kinda wanna try Amd. Not 100% sure if i will go custom loop or not but it is a option as well. i do plan on getting a 4k monitor and maybe try streaming at some point. https://pcpartpicker.com/list/cLh9jp

Couple more weeks before Zen3 so probably better to wait just a bit longer. You might get more for your money by then.

Build looks good, I agree though at this point you should wait for Zen 3 if you can.

I would can the conventional HDD. You are going to go from quiet and fast to slow and noisy.

As others have said, wait for Zen 3 and see how it compares. The 10900k is slightly better for pure gaming, but if you want to stream you might benefit from the extra cores on AMD. Hopefully you have the monitor to take advantage of all that GPU horsepower!

Wait for Zen3, even if only for the eventual price drop so Intel stays competitive in the market. Other than that everything looks good to go.

I'm in the same boat, waiting on Zen3 to see what it looks like. I have power supply, case, keyboard, mouse. Waiting to see what AMD shows next thursday then I'll decided on CPU which decides MB and memory. Then I need to get 3080 somehow.

I'm in-between as well, if AMD inches within 5% in gaming with this launch, I think Intel's goose is cooked and you're gonna see a ton of people switch. PCI gen 4 support is a huge upside since everyone's switching to M2 SSDs. Probably gonna go with a 5800X to limit the need on a high end CPU cooler for the 150W 12-core 5900X.
