Stabilizing some burl wood

Right side is fresh off the machine, left side is a test polish.  The raised section needs to be sanded down.

A little less curve on the knife edge and more handle, and abit thicker on the back third of the back of the blade towards the handle, to use ur ur finger to balance the blade?

20+ years Nate, now I just cook at home and I still do 90% scratch cooking. I won't ever cook in a commercial kitchen again 😇.....

But yes, that last render is pretty close to what I'm wanting.

Not as much time in the kitchen as use to be. Mostly these days I just prep fresh veggies, whole turkey/hens, beef and pork shoulders.

So would you want an "as quenched" knife?  It will be harder then a file (ultimate edge retention) but somewhat brittle.  If you drop it on the concrete it may crack.  tempering is what gives the knife a little more "toughness" which means slightly softer.  
 
I just finished a fixture plate for a prototype version.  I will be picking up the steel tomorrow.  Going to go with some 1075 "sword" steel for the prototype.  Very tough stuff.  If the feel is right, then I will make a san mai version.

As for a kitchen knife, a thinner blade is better. As for a dagger or long sword, I'm not sure, the only sword I played with back in my martial art days was a katana, unless you count a bo staff and a pair of Escrima Sticks, which would be awesome to get done in a chrome super light weight steel 😇 "Nate!" Haha....

when I say tempered, i mean the process to take hardness away to make it more pliable.  Think of the knife like a file.  Its very hard, and you can cut steel with it.  But if u drop it on concrete it may break.  Or like glass, its very hard.  tempering allows it to bend more, making it "tougher" and able to withstand impacts.  You would want this for a chopping camp knife, but if its a babied kitchen knife that is only used for cutting, then perhaps you may want it straight out of the quench with max hardness.

Might have to keep a set of these kitchen knives along with my CC too, laughs!!
