I have recently built the following PC:

Ryzen 5 1600 (coupled with stock Wraith Spire cooler)
ASUS Prime B350M-A Micro ATX AM4 Motherboard
Corsair - Vengeance LPX 16GB (2 x 8GB) DDR4-2400 Memory
SanDisk - SSD PLUS 240GB 2.5" Solid State Drive
Seagate - Barracuda 2TB 3.5" 7200RPM Internal Hard Drive
EVGA - GeForce GTX 1060 6GB 6GB SC GAMING Video Card
EVGA 500BQ 500 watt Power Supply
All in a Fractal Design - Define Mini C MicroATX Mid Tower Case
Windows 10 Pro
Logitech X-210 speakers

I already had the following monitors:

Asus VE248HR 24" monitor (connected via HDMI)
BenQ G2220HD 21.5" monitor (connected via DVI)

I am using the latest BIOS, graphics and audio drivers.

From the beginning, I have suffered display problems. The lesser of the problems is that the Asus 24", connected via HDMI, isn't always detected by Windows 10 when the PC wakes from sleep, or when the PC boots. The workaround is to unplug then plug back the HDMI cable.

However the much bigger problem is that the monitors and sound will unexpectedly shut down, even though the PC is still running (CPU and chassis fans still running).

It's as if the graphics card is overheating. In normal windows use (browsing the internet, etc), I cannot replicate the issue. However, with just a short period of playing games (iRacing or rFactor2 for 20 mins), the monitors shut down and sounds goes off when I return to Windows, or shortly afterwards.

I don't mean the monitors just go black, I mean the monitors and lose power.

I have to restart the PC to get the displays back, and the monitors will continue to shut down every 5 minutes or so.

I say it's "as if" the graphics card is overheating; I have been using NZXT's CAM monitoring software, and it suggests the card is not getting hotter than around 62 °C, which don't believe should be an issue? The graphics card fan is spinning with no issue.

Even when the temperature drops way back down to much lower temps, the screens will still shut down unexpectedly, afterwards during normal windows use.

Anyone have any ideas? Faulty motherboard? Faulty graphics card? Faulty power supply?
